WHAT’S FOR DINNER?

There are a lot of wonderful things that you can cook for dinner every night. That is if you had the time after work, after picking up the kids and taking them to soccer practice and or  pick up the cleaning. All that before you get home. Then when you get home ya gotta clean up because it’s messy from when you were rushing out this morning, knocking shit over as you searched for your car keys, lap top and your other brown shoe.


You see all this could have been avoided if you planned out your meals at the end of each week. But who has time for that? I’ve been trying to plan a weekly menu for a while now and the road block that I run into is knowing that I am not going to have time to cook this food each night. Or what if I am not home by 6 or 5 pm to eat before 8 pm? Do I stop at McDonalds for a Big Mac, fries and a vanilla shake? Taco Bell for that taco burrito special?

Thinking ahead and knowing that that is not how we want to eat, we bust out the slow cooker that morning for some beans and rice to be ready for eating when we get home. Or prepped some Chard or cabbage the night before for a cool saute’. There are a lot of quick and easy meals that you can fix for you or the family when you don’t have the time for that 5 coarse family dinner.

We decided since I didn’t feel like cooking last night that we would have a simple salad. Mixed greens, sprouts, Julianne zucchini and carrots and my almost famous Balsamic vinaigrette…It was great and took the edge off. After the fact I thought. Wow that would have been cool with a Queso Quesa dilla (Cheese quesa dilla) on the side. Maybe next time.

What do you do if you don’t feel like cooking? Any suggestions?
