in WADAHSEIH? THOUGHTS FROM ED?

Conversation with my face book friend Gina… In regards to veggie black eye peas.

Since it’s easier for folks to post on face book instead of the blog I decided to cut and past this conversation in “WADAHSEIH”

Chef Ed Brown some onions, in some butter (for flavor) and olive oil. That takes about 20 minutes. Garlic, salt and pepper…

Do you have some cheesecloth? Get some dried herbs…tyme, bay leaf, rose mary and black peppercorns. Rap them in the cheesecloth or a little cloth bag. Tie it up tight and stick it in the beans for about an hour…
holler…

Gina Hey Ed… My peas turned out great! I picked the brains of older woman w/soul food experience! Next time, I will use cheesecloth I like that concept!! Thanks for taking out the time & sharing!!! Happy New Year!!

Chef Ed The cheesecloth allows for more control over disbursement of your herbs then your able to take them all out and not have to be chewing on a bay leaf. I hope this helps.
