The other day I received a comment from Gilda, a friend of Cooking With…Ed? About how to “Make ripe Tomatoes firm again”. Here’s my reply…What to do with all them Tomatoes…
Gilda writes…
“Thanks Cooking With…Ed?. I have a “ginormous” tomato plant with a lot of tomatoes, any suggestions of what to do with them?” At first I thought Ginormous? Wow! How big is that plant? Girl if you have that many tomatoes you got a tomato farm…Then I thought “Wow that’s a great question.
You see Gilda we subscribe to Farm Fresh To You an Organic Produce Delivery Service. Where bi-weekly they deliver farm fresh local produce right to our door. In the box comes a variety of fruits and vegetables and a request for our expression of appreciation (a nominal fee) which we gladly express.
This particular delivery we received a “GINORMOUS” amount of tomatoes. Also the night before Keba Konte from Kijiji grows gifted us some tomatoes from his sustainable gardens at Moss Wood Park here in Oakland CA. Needless to say we had a plethora of tomatoes to enjoy.
Long story short…
There are a lot of different recipes that one can do when they find themselves possessing an abundance of Tomatoes. Gilda here’s what I did.
Cooking With…Ed?
Loosely chopped all of the tomatoes…
Put them in a bowl…
Using a garlic press added four cloves of garlic…
Salted to taste…
Covered the tomatoes and garlic with Olive Oil and let sit for a couple of hours.
If you noticed there is no stewing of the tomatoes involved but, you may chose to warm your sauce up, that’s cool too. Usually the pasta will do that for you…Don’t be afraid to put your own twist on it…Cooking With…Ed?
Saute some onions, Bell Pepper, Mushrooms even add some Tofu to it if you want…Boil up your favorite pasta, which, for tonight’s menu, calls for spaghetti. Plate the spaghetti topped with your fresh tomatoes sauce, with a twist, and fresh Garden salad on the side.

Have you ever cooked fried green tomatoes? It’s actually quite tasty and since I have so many of them, I had to figure out something to do with them all.
